Japanese mochi is a delicious and popular sweet that you can make yourself using your favourite filling ! With a chewy, smooth, elastic texture, mochi dough is often tinted with green tea powder (matcha) wrapped around a sweet center to form small, bite-size confections.

Tips:


- Use a silicon spatula to stir the cooked dough, because it is very hot and sticky.

- It is best to enjoy the mochi on the same day you make them.

- Pair with a matcha latte for the ultimate green tea kick.

- Keep any leftover mochi covered with plastic wrap or it will dry out.

- You can replace red bean paste with other filling like chocolate paste or peanut butter paste. Make sure filling that you used can form round shape and not watery. Be creative and create your own mochi!

Steps:

 

Step 1:

 Measure ½ tbsp of red bean paste and gently roll into a ball. You will need 7-8 balls in total.

 

Step 2:

Mix 10 g of water with Rosie’s Ross Matcha Green Tea Powder. Set aside. 

 

Step 3:

After that, in a medium sized bowl, mix glutinous rice flour, water, sugar and green tea mixture. Mix well.

 

Step 4:

Cover the bowl with cling wrap, leaving a small gap on the side to allow steam to escape. 


Step 5:

Steam the mochi for 20 minutes on a preheated steamer. 


Step 6:

After the cooking process is done, stir the hot dough using spatula and transfer to a tray that covered with corn starch. Divide dough into 8 equal portions.
 

Step 7:

Cover hand with corn starch and gently roll mochi dough, then flatten 1 piece of mochi dough to approximately 4 cm
across.

Step 8:
Place ball of red bean paste on the dough. Pinch opposite’s sides of the dough to seal in the red bean. Roll in between your palms to form a ball and placed a mochi on the starched tray. Repeat with remaining dough and red bean paste.

Step 9:
Once complete, brush off access starch on the surface and place mochi on a serving dish. 


Serve it with steaming hot green tea!
